Pumpkin Ale, Summer 2007

This is my second attempt at making a Pumpkin Ale. My expectations are really high with this one since the last Pumpkin Ale turned out really well. This Pumpkin Ale is a combination of two recipes. (TODO, update with recipe information.)

Plan

The plan includes three states of fermentation to reduce the amount of yeast sediment in the finished beer.

Recipe Notes

Some changes since the last time I brewed this beer.
  1. I remember using less ground ginger last time I brewed this beer. It was not reduced intentionally but I might need to adjust this next time if the brew does not come out like I want it to.
  2. I used fresh nutmeg this time, not the pre-grounded version. Maybe I should have also used fresh allspice too.
  3. I also don't remember using bittering hops last time. I included them in this brew, so we will see how it goes.

August 19, 2007 (Brew Day)

Beer brewed outside using 20 quart stainless steel stockpot on the turkey-fryer burner. Used well water that was filtered for sediment. Original gravity should be around 1.050, and the actual starting gravity was 1.040. Final volume of wart is 5 1/8 gallons. This is the second beer that the measured starting gravity is lower then the target. Possibly something wrong with the hydrometer.

August 26, 2007

Moved the beer to the secondary fermenter (glass carboy). The yeast fermented the beer down to 1.012 at 70°, which is the lowest gravity I've seen after only the primary fermentation. There was also lots of spent yeast at the bottom of the fermenter. The beer needs time to clear still, so the next three weeks will be good for it.
As for taste, it's great so far. The addition of the bittering hops made a big difference. I think it was missing them the first time I made this beer. Colynda thinks that it is too bitter to taste the pumpkin. The bitterness will mellow out over the next three weeks, so we will see how it ends up. Over all, it tastes great for only being a week old.

September 9, 2007

Moved the beer to the tertiary fermenter (glass carboy). If I had bottles prepared, I would have bottled it. The beer was very clear and tastes good. Bottling will need to wait for another week.

September 21, 2007

Bottled the beer. The beer is very clear and tastes great. The spices are less noticeable in this Pumpkin Ale compared to last year, so I will need to make some modifications for next years batch. We will see how it tastes after it is bottle conditioned. The yield was low in this brew. I was only able to fill up 36 bottles.
